Bacon Wrapped Scallops

These butter-garlic scallops wrapped in bacon are possibly the tastiest appetizer ever! You can also serve them with a salad on the side at dinner. Either way, you'll impress your family with a delicious treat.

Bacon Wrapped Scallops
Ingredients for Bacon Wrapped Scallops:
Bacon slices - around 6
Scallops - 12 (preferably large sea scallops)
Butter - 1 tbsp. (melted)
Garlic - 1 clove (minced)
Parsley - 1 tsp.
Lemon pepper - 1/2 tsp.
Salt and Pepper - to taste
Skewers - 4
Method of preparing the Bacon Wrapped Scallops:
  1. Soak 4 short wooden skewers in water for half an hour. This ensures that they don't burn in the oven.
  2. In a frying pan, cook bacon for 3-4 minutes on each side. Bacon should be cooked but not crisp.
  3. Pat dry scallops with paper towels, remove the stems, and season with salt and pepper.
  4. Wrap half a slice of bacon around each scallop, or just enough to wrap around. Then thread 3 scallops on each skewer.
  5. In a small bowl, combine the melted butter, parsley, garlic, and lemon pepper. Brush each scallop with the butter mixture.
  6. Place the oven rack 6 inches away from the broiler. Line a baking pan with aluminum foil and set the scallops on the pan.
  7. Broil the scallops for 8-10 minutes, flipping at around the 3-minute mark. The bacon should be crisp but not overcooked.
  8. Alternatively, grill 6-8 minutes on the medium setting of the grill.
Chef's Tip:
To make lemon pepper at home, bake lemon peels (without pith) from 5 lemons for 2-3 hours on the lowest setting, and grind with 1/4 cup peppercorns and 2 tsp salt.
