American Flag Mini Cakes

If you don't have the time to make our huge "go-big-or-go-home" July 4th cake, consider the following version, which is much more modest and smaller. These are personal flag cakes. They can be a little challenging to put together, but the hard work will pay off.

Ingredients for mini cakes:
Cream cheese - 4 oz. (room temp.)
Whipped cream - 8 oz.
Blueberries - as needed
Method of preparing the mini cakes:
  1. Prepare the cake following instructions. Make one whole cake and let it cool completely when done.
  2. Beat the cream cheese in an electric mixer until it becomes fluffy. With a spatula gently add the beaten cream cheese to the whipped cream.
  3. Now cut the cake into small squares. Cut each square in the middle, horizontally, to make 2 layers.
  4. Glue the 2 layers back together with some frosting. Once you're done, put the frosting into a piping bag.
  5. Draw some horizontal lines on the top of the cakes, and glue on some blueberries at the top left corner of each with frosting.
