Meat Stuffed Grain Patties

Kibbeh, or kube, is a Syrrian dish consisting of grain patties filled with vegetables or meat. The patty is most commonly made of semolina or bourgoul. It is usually served in gravy or soup and filled with beef or lamb meat.

This dish will go perfectly over white rice.

Meat Stuffed Grain Patties
Ingredients for patties:
Semolina - 1 Ibs
Salt - 1 tsp.
Water - 1 1/2 cups
Ingredients for gravy:
Vegetable oil - 6 tbsp.
Onions - 1 (diced)
Salt and Pepper - as needed
Water - 4 cups
Paprika - 1/2 tsp.
Ingredients for filling:
Ground beef - 1 Ibs (could also be lamb)
Salt and Pepper - as needed
Turmeric - 1/2 tsp.
Method of preparing the patties:
  1. Mix the semolina and salt in a deep bowl. Gradually add the water and knead until you have a dough. Cover in cling wrap and let sit for 30 minutes.
  2. While you wait, start on the gravy. Sauté the onion in a deep saucepan with oil. Add the canned tomatoes and the salt, pepper and paprika.
  3. Add in the water and cook to a boil. Once boiling, lower the flame and let simmer.
  4. Mix all ingredients for the filling and form it into ping-pong-sized balls.
  5. Flatten the balls and cover each with dough. Roll it to fully cover it. You can shape it into spheres or a baseball shape.
  6. Put the patties into the saucepan with the gravy. Turn the flame up to medium, and cook for 15 minutes.
