Goat Cheese Pops with Herbs, Pecans, and Bacon
Ingredients for Goat Cheese Pops with Herbs, Pecans, and Bacon:
Cream cheese - 8 oz. (not whipped)
Goat Cheese - 4 oz.
Thyme - 2 tbsp. (chopped and divided)
Herb mixture - to taste (any of your choosing)
Salt and Pepper - to taste
Bacon slices - 6 (cooked)
Pecans - 1/4 cup
Method of preparing the Goat Cheese Pops with Herbs, Pecans, and Bacon:
  1. Mix the spices and herbs.
  2. In a food processor, place the cream cheese, goat cheese, and 1 tablespoon of herbs. Process until all is combined. Form small balls of the mixture, place them on a plate covered with parchment paper, and insert lollipop sticks into the center of each one. Refrigerate.
  3. Using the food processor again, process the bacon, 1 tablespoon of herbs, and the pecans, until a fine, crumbly mixture is achieved. Roll the refrigerated balls in the bacon mixture to coat them, and store in the refrigerator until ready to serve.
Chef's Tip:
Packages of goat cheese sometimes go by the name "chevre" in the store. Either is fine.
