One refreshing and nutritious option is sherbet, a frozen dessert often made with fruit juice or dairy drinks. This recipe will show you a carrot juice-based sherbet that's extremely appropriate when the Easter bunny is around.

Ingredients for Vegan Carrot Orange Sherbet:
Orange juice - 1 cup (preferably freshly squeezed)
Carrot juice - 1 cup (preferably freshly squeezed)
Granulated sugar - 1/2 cup
Kosher salt - 1/4 tsp.
Lemon juice - 1 tbsp. (freshly squeezed)
Orange liqueur - 2 tsp. (or vodka, optional)
Vanilla Extract - 1 tsp.
Coconut milk - 1 1/2 cup (full fat)
Method of preparing the Vegan Carrot Orange Sherbet:
  1. In a medium saucepan, combine the orange juice, carrot juice, sugar, and salt. Bring to a simmer and stir until the sugar dissolves.
  2. Remove from the heat and whisk in the lemon juice, orange liquor, vanilla, and coconut milk.
  3. Transfer to a bowl, cover, and chill in the fridge until very cold – at least 4 hours and preferably overnight.
  4. Process in an ice cream maker according to the manufacturer’s instructions.
  5. Transfer to an airtight container and freeze until firm. Eat within a week of making.
