Curry Chicken With Cashews

Cashews in cooking are mainly known to be the creamer component in a lot of vegan recipes. But its high nutritional profile offers great value for chicken dishes as well. Enjoy this ethnic chicken, perfect for a dairy-free, diabetic or gluten-free diet.

Ingredients for chicken:
Onions - 1 (chopped)
Garlic - 3 cloves (chopped)
JalapeƱo - 2 (seeded)
Cashews - 1/4 cup
Turmeric - 1 tsp.
Lemon juice - 3 tbsp.
Soy sauce - 1 tbsp.
Light brown sugar - 1 tbsp..
Ginger - 1 tbsp. (fresh and grated)
Peanut oil - 1 tbsp.
Lemon grass - 1 stalk (minced, optional)
Coconut milk - 1/2 cup
Salt - a pinch
Coriander - for garnish
Sesame - for garnish
Method of preparing the chicken:
  1. In a food processor, pulse the first 9 ingredients into a smooth paste.
  2. Oil a deep pan over medium heat and pour in the mixture. Fry and stir constantly for 4-5 minutes.
  3. Add the lemongrass stalk and the chicken and fry for 15 minutes.
  4. Add the coconut milk and 1/2 cup water and lower the flame to a simmer. Cook without a cover for 30 minutes or until chicken is tender.
  5. Garnish and serve. You can serve with some sliced cucumbers and rice.
