Cheese Stuffed Chicken with Bacon

Comfort food doesn't get more decadent than these feta-stuffed and bacon-wrapped chicken breasts. Surprisingly, this seemingly complicated recipe requires very few ingredients and it's ready in just under an hour. So roll up your sleeves and give this amazing recipe a try.

Cheese Stuffed Chicken with Bacon
Ingredients for Chicken Stuffed with Feta and Wrapped in Bacon:
Baby spinach - 1 cup
Feta cheese - 1 cup (crumbled)
Cream cheese - 1/2 cup
Garlic - 2 cloves (minced)
Chicken breast - 4 (boneless and skinless)
Olive oil - 1 tbsp.
Method of preparing the Chicken Stuffed with Feta and Wrapped in Bacon:
  1. Preheat the oven to 350°F (180°C).
  2. In a skillet, heat up a small quantity of oil and cook the spinach until the leaves have wilted. Let it cool.
  3. In a bowl, stir together the feta cheese, cream cheese, spinach, and garlic.
  4. Pat-dry each chicken breast with paper towels and season with salt and pepper. Then take a very sharp knife and carefully cut a pocket in the side of each chicken breast.
  5. Stuff each chicken breast with the cheese and spinach mixture using a teaspoon or a pastry bag. You can close and secure the pocket with a toothpick if you'd like.
  6. Then take wrap each chicken breast with 2 slices of bacon so that the edges are tucked underneath the chicken.
  7. In a large oven-proof frying pan, heat the olive oil on medium-high. Brown up each chicken breast on both sides. This should take around 3-5 minutes on each side.
  8. Nestle all 4 of the chicken breasts into the pan and cook in the oven until the chicken is fully cooked. This should take about 10-12 minutes.
  9. Let the chicken rest for 5-10 minutes, then cut into medallions and serve with your side dish of choice.
